6 Happy Married Months

Val and I are 6 months married today. Yay!

A few days ago, I digiscrapped a photo of him as a groom  and showed it to him before we went to mass this morning. He loved it! He likes it a lot when he looks great in the photo. Haha!

Thanks to StarLight Designs for this lovely quickpage and ANJ Designs for the gold alpha freebie. If you want to download it, just head over to their blog.

I also tried cooking pork estofado for him. It had been his request a few days ago. So here it is!

It's a little overcooked but hey, it isn't bad for a first try. Besides, Val loved it so much. I actually had to tell him to slow down because it's a dangerous fatty food. Anyway, here's my recipe.

Ingredients:

1/2 kilo pork, cut into large serving pieces
3 pcs saba (plaintain banana) sliced diagonally into half
1 medium size carrot, sliced diagonally
2 medium size potato, cut into chunks
1 tbsp chopped spring onion
1/2 head garlic, crushed
2 tbsp sugar
1/2 cup soy sauce
1/4 cup vinegar
2 tsp peppercorns
2-3 pcs bay leaf
salt

Directions:
Lightly brown pork on all sides in a saucepan and set aside. Remove excess oil and in the same pan, saute garlic until fragrant. Add the pork, then pour in soy sauce, vinegar and 3 cups of water. Next, add in sugar, peppercorns and bay leaf.  Bring to a boil. Do not stir. Simmer in medium heat for 20-30 minutes or until pork is almost tender. Add more water if necessary. Add in carrot, potato and banana and cook for 5-10 minutes or until they're cooked and the liquid has reduced to almost dry and oily. Check saltiness, then garnish with spring onion. Enjoy!
